SAUTEED CHIVES (TUMIS BUNGA BAWANG/KUCAI)

First of all i want to thank you to my beloved mama who has inherited to me her Femina Magazine (Indonesia) bundle recipes. Well...for me this is more like an invaluable treasure from her :-). And this recipe is coming from February 1992 recipes collection, let's check it out.



Ingredients :

3 tbsp cooking oil
2 shallot, thinly sliced
4 garlics, thinly sliced
3 red chilli, sliced
1 tempe (fermented soy bean), cut in to small squares
300 gr  shrimp, dry it.
200 gr chives
1 tsp salt
1/2 tsp pepper
2 cm galangga, crushed
1 bay leave
1 tsp palm brown sugar

Method :

  1. Pre heat wok pan, stir fry shallots and garlic until fragrant. Put chili, tempe, then add bit of water.
  2. Add shrimp, salt, pepper, galangga, and bay leave, stir well.
  3. Add sugar and chives, turn the heat in to low level. Stir until the chives coming shriveled. Turn off stove.
  4. Serve warm with rice.

KETAN SRIKAYA (STEAMED GLUTINOUS RICE WITH PANDAN COCONUT SAUCE)

This is a glutinous or sticky rice that steamed with thick coconut sauce that we call it 'Ketan' is very popular in Indonesia even in Malaysia. This time i am trying to share my yesterday breakfast was an Indonesian style of 'Ketan Srikaya' which is popular breakfast menu from South Sumatra.



Ingredients :

- 500 gr sticky rice/glutinous rice
- 250 ml coconut milk
- 4 eggs
- 60 gr multi purpose flour
- 185 gr sugar
- 500 ml thick coconut milk
- Pandan leaves
- 3/4 tsp pandan paste (to make green colour and flavor)

Method :

  1. Soak the sticky rice with water over night.
  2. Cook the sticky rice with 250 ml coconut milk and pandan leaves, add pinch of salt then cover the pan and let it cooked until the coconut milk runs out. Then move it to the steamer and steam it about 10-20 minutes.
  3. Mix eggs and sugar in a bowl, beat it with whisk. Preheat a sauce pan, then cook 500 ml thick coconut milk with eggs n sugar mixture, add pandan leaves and pandan paste, let it warm add flour then stir well until cooked.

SIOMAY BANDUNG

Finally, accomplished practicing this favorite appetizer at my home kitchen. Big thanks to my favorite course teacher at NCC (Natural Cooking Club) Mba Riana Ambarsari Pennylane Kitchen who teach me everything about this 'Siomay Bandung' from A to Z. Served this Siomay together with the  peanut sauce, a bit lime juice, and sweet soy sauce, if you like you can enjoy it with tomato ketchup also. Here is the recipes ;-)




Ingredients :

500 gr King Fish fillet/Baracuda fillet, make puree.
2 tbsp onion, make puree
1 tsp garlic, make puree or you can use garlic powder.
1 1/2 tsp white pepper
3 tbsp sugar
3 tsp salt
1 tbsp sesame oil
3 eggs
400gr chayote/labu siam, coarsely grated.
450 gr tapioca flour.
1 pack wonton/siomay skin. (you can easily find in Chinese or Asian stores).

Methode :

1. In a large bowl, mix together with large wooden spoon all the purees ingredients + salt, pepper, sugar, sesame oil, eggs, and grated chayote.
2. Add tapioca flour then mix it whit large wooden spoon. 
3. Take 1 sheet of wonton skin, then put about 1 tbsp siomay dough, then shape it like dim sum. Other than using wonton skins, you can also use potatoes, bitter gourd, eggs, and cabbage as well as you can see from the pictures.
4. Put them in a steamer then steam it approximately for 30 minutes.



Peanut Sauce :

500gr peanut, fried, make puree.
200 gr red chilli, blender/mashed. (don not use chili if you don't like it to be spicy hot).
3 garlic, mashed.
2 tbsp vinegar / tamarind water.
2 tbsp salt
8 tbsp sugar
3 tbsp cooking oil
500 gr sweet potato, steamed then blender.
1,5 lt water.

1. Heat the wok pan with cooking oil. Stir fry garlic and chili until fragrance.
2. Add puree peanut and sweet potato with water. Mix well until boiled.
3. Turn off the stove, then add sugar, salt, and vinegar.

Note : to make puree you can use blender or hand blender as well.

BOTOK DAGING CINCANG

Ingredients :

Botok daging cincang saya ini menggunakan resep sakti turun temurun dari Oma tercinta. Masakan lezat, dan mudah membuatnya. Apalagi yang memiliki steamer.....hhmm...it will make more easy n super fast cooking ;)

- 300 gr daging sapi cincang
- 250 ml santan kental
- 4 butir telur ayam, kocok lepas
- cabai rawit secukupnya
- 2 helai daun bawang
- daun salam
- daun pisang atau aluminium foil untuk membungkus atau menggunakan pinggan tahan panas.
   (saya menggunakan pinggan tahan panas).

Bumbu Halus :

- 6 butir bawang merah / 2 buah shallot
- 3 siung bawang putih
- 2 cm kunyit (1 sdt kunyit bubuk)
- 2 cm kencur
- 1 1/2 sdt lada halus
- 1 1/2 sdt ketumbar bubuk
- 2 sdt garam
- 1 sdt gula pasir

Directions :

1. Tumis bumbu halus sampai harum. Angkat.
2. Campurkan daging cincang dengan tumisan bumbu, telur, daun bawang, dan santan. Aduk hingga rata.
3. Siapkan pinggan tahan panas atau daun pisang atau aluminium foil, beri daun salam, lalu masukan adonan, lalu masukan cabai rawit utuh. Bungkus.
4. Kukus sampai matang.

Ayam Kecap (Sweet Soy Sauce Chicken Lemon)

This is a very easy & delicious dish, you can served it within 1hr or less including preparation. Happy Cooking ^_^




Ingredients :

- 1 Chicken, cut it into 12 peace.
- 2 teaspoon garlic powder (make paste) or you can make it from 4 clove garlic (mashed) mix with 2 tablespoon of water.
- 2 Big Lemon
- 4 tablespoon sweet soy sauce (preferably Indonesia sweet soy sauce)
- Approximately 1 cup cooking oil for frying
- 3 tablespoon olive oil
- 2 big brown onion.

Direction :

Marinated chicken with garlic paste & lemon juice from 1 lemon for 10-15 minutes. Meanwhile preheat a fry wok pan with cooking oil inside, after that fry the marinated chicken for about 5 minutes, remove then put in the oil strain.

Sliced the brown onion. Preheat a fry pan with olive oil, then fried the sliced brown onion until medium tender. Add sweet soy sauce and lemon juice from 1 big lemon then stir. Then add the fried chicken then stir it well for 1 minute only.

Served it with your favorite steamed rice (Jasmine rice, parboiled rice, etc.)

Bakso Tahu Kuah

Tiba musim dingin saya rindu dengan Bakso Kuah yang gurih dan nikmat khas Indonesia, nikmatnya bakso kuah terletak pada rasa kuahnya yg sedap,akhirnya saya coba membuatnya sendiri. Dengan bawang putih cincang yang ditumis lebih dulu membuat gurih rasa kuah bakso. Selamat mencoba.



Ingredients :

- 1/4 kg bakso sapi/ayam/ikan
- 1 kotak tahu putih (potong kotak / persegi panjang)
- 150 gr tulang sapi dengan dagingnya atau hanya tulang.
- 5 buah bawang putih (haluskan)
- 1 buah shallot/bawang merah besar (haluskan)
- 3 sdm minyak goreng
- 1 lt air
- 1 sdt garam
- 1 sdt merica bubuk
- 1 sdt gula pasir

Pelengkap :

- Daun seledri (iris)
- Daun bawang (iris)
- bawang goreng
- perasan jeruk lemon
- kecap manis
- sambal botol.

Directions :

1. Rebus tulang sapi dengan air, lalu masukkan bakso.
2. Tumis bawang putih dan bawang merah sampai harum.
3. Masukkan tumisan bawang kedalam rebusan kaldu daging & bakso, tambahkan tahu.
4. Beri garam,gula, dan merica bubuk sesuai selera.

Hidangkan bersama dengan mie & bihun plus pelengkap.

Note :
- Bakso bisa variatif, bisa bakso sapi , atau bakso ayam, atau bakso ikan + udang. Sesuai dengan selera. Di foto ini saya menggunakan bakso ikan.

Sambal Goreng Penyet

Terinspirasi dari sambal goreng sedap yg menyertai Ayam Penyet favorite langganan kami. Saya coba membuatnya sendiri di rumah. Sambal goreng ini serbaguna, bisa untuk Ayam goreng biasa atau ayam goreng penyet, ayam bakar, ikan bakar or goreng, dll. Biasanya  saya buat dalam porsi banyak lalu saya masukan kedalam air tight container dan simpan didalam kulkas....bisa bertahan kira-kira 1 minggu ;)

Bahan :
- 2 buah shallot (bawang merah besar) (iris tipis)
- 2 siung bawang putih (iris tipis)
- 1 buah tomat (iris)
- 1 sdt garam
- 1 sdt gula pasir
- 3 sdm olive oil atau minyak goreng.
- Lemon atau lime atau jeruk sambal.

Bahan yg dihaluskan :
- 1 buah shallot
- 1 siung bawang putih
- 6 buah cabai merah (atau sesuai selera)
- 1 ruas jari kencur
- Terasi secukupnya (saya menngunakan 1 buah terasi instant ABC)


Directions :

1. Panaskan wajan beserta olive oil, masukkan irisan shallot,goreng hingga setengah layu, lalu masukkan bawang putih.
2. Masukan bahan halus, aduk sampai harum, lalu tambahkan irisan tomat. Aduk rata sambil ditaburi garam dan gula.
3. Aduk-aduk terus hingga tomat layu dan semua tercampur rata. angkat, tambahkan perasan lemon/lime/jeruk sambal.sajikan.

Sambal goreng lezat pedas menggoda siap dihidangkan.
